I love tofu but often people complain about their dislike for it. I admit Tofu is not the most exciting of foods but you can easily jazz it up with a good sauce and seasonings. Deep fried tofu dipped in sweet chilli sauce has to be one of my favourite dishes. Tofu is a good source of protein, vitamins and minerals including iron and calcium.

I chose to become vegetarian in my teens and because I'm allergic to milk and eggs I didn't realise at that age I was accidentally vegan. Tofu quickly became an ingredient which I relied upon and it's readily available in popular supermarkets but also found in local Asian stores. Tofu is usually available in two types - firm and silken. I also have a plain block to hand in my fridge and buy Tofoo or CauldronI like to make scrambled tofu as a replacement for scrambled eggs. There are many recipes online so it’s a case of finding what suits your own taste buds.

Here's my method of making scrambled tofu -

I mash or crumble the tofu in bowl with a fork or my hands. For seasoning I add whatever I have to hand - garlic, paprika, salt (or soya sauce), pepper and nutritional yeast. You can use turmeric to add a yellow colouring to imitate eggs. Then I'll throw in vegetables and it really can be whatever you have on hand such as peppers, mushrooms, spring onions, spinach, kale. Next you simply heat in a pan for about 5 minutes making sure that the tofu is heated through. Try not to overcook if you want to replicate the consistency of scrambled eggs.

Scrambled tofu makes a great addition to any vegan fry up breakfast. I also like to add the tofu to buttered toast with lashings of tomato ketchup, on occasions include it with baked beans. I would encourage you to get cooking and experiment in the kitchen. If scrambled tofu isn't to your taste try marinating and add to stir frys, salads and sandwiches.
