Sunday Catch Up (11) - Vegan Mac & Cheese

Happy Sunday Sugarpuffettes wow, can you believe it is Sunday again, that week certainly went fast. It has been a week of ups and downs for me. I have felt a bit emotional about everything this week, my job, my health and my friends. Thank goodness for my blog and twitter it certainly helps pull you out of a funky mood!  Anyway enough of that stuff.  For me April is full of birthdays including my sister, so here is what I picked up for her.




How cute? As you know my parents have two adorable dogs so we all love dogs. I could not resist this. The brand is Jellycat Catseye and I brought it at a local garden centre (surprising how good garden centres are for funky gifts it's not all about plants these days).  

My favourite snack of the week has been Nakd Infused Raisins. They are available in a variety of flavours - cherry, pineapple, cola, lemon, orange, lime. I am unable to try the citrus fruits as it is one of my allergies but cherry and pineapple work for me (cherry is my top favourite). These are sold in supermarkets and health food stores.

Sugarpuffish cooks Vegan Macaroni & Cheese


I have experimented in the kitchen this week.  I had a sudden desire to try and make dairy free macaroni and cheese.  I realised I could not recall ever having mac n cheese, even prior to having my allergies diagnosed.  My Grandma would make us Macaroni and Breadcrumbs, sounds weird but I have fond childhood memories, it is certainly where my love for cinnamon comes from.  Anyway, I browsed the web for vegan mac n cheese recipes but could not settle on one I liked the look of. In the end I got creative. I decided to make a white sauce, you know the kind you find in lasagne.  A white sauce is made using butter, flour and milk (obviously I used my dairy free substitutes for butter & milk). When the sauce was complete I stirred in lots of finely grated dairy free cheese, pepper and paprika. Then I added cooked macaroni to the cheese white sauce, gave it a stir then transferred to an over proof dish.  I topped it with a handful of grated cheese and a sprinkle of paprika.  Next I baked in the oven for about 15 minutes.  I took it out the oven when the top was crispy and I could see the sauce bubbling.  Hey Presto I had made tasty dairy free mac n cheese.

  1. Awww how cute is that dog print bag! Thanks to my friend, I have been trying some vegan stuff as well. I am already a vegetarian but vegan seems different. I eat so much without even realising it is vegan! That Mac and cheese looks delish :)

    1. I don't follow a strict Vegan diet because I so like honey and use creams with beeswax, you will have to let me know how you find being vegan. :)
