Merry Christmas 2013 - Vegan Sugar Cookie Recipe

Sugar Cookies
2 1/3 cups of all purpose flour
2 tbs cornflour
1/4 tsp salt
1/4 tsp baking powder
1/2 cup vegan margarine
1/2 cup vegetable shortening
1 cup sugar
2 tsp vanilla extract
1/2 tsp almond or lemon or maple extract
1/4 cup vanilla plant milk (or plain if not available)
In mixing bowl combine flour, cornflour, salt and baking powder
In another mixing bowl cream together margarine, shortening and sugar until light and fluffy
Add the plant milk, vanilla extract and the flavour you chose - almond/lemon/or maple
Mix in the dry ingredients, add half at a time until it forms a soft dough
Wrap in clingfilm and chill in fridge for a few hours or overnight
Roll out dough and cut into shapes with cookie cutters
Bake for 8 - 10 minutes at 170C
Allow to cool before decorating
