
The one recipe I cook time and time again comes from egglesscooking.com and is for Vegan Chocolate, Oatmeal and Peanut Butter Muffins. I haven't got a muffin tin so I make them fairy cake size. I swear in a previous life I was an American because I have been addicted to Peanut Butter since childhood. The only changes I make to the recipe are adding in extra peanut butter and I am not a fan of rice milk so use my regular soya milk. For an added indulgence I mix icing sugar, peanut butter and small amount of warm water to make a topping.
