Recipe: Vegan Peanut Butter Cups

vegan peanut butter cupsI am a peanut butter junkie and I am thankful not to have a peanut allergy. Most of you can have Reese's peanut butter cups but they are off limits for me so I have been trying to get my hands on Cleo's dairy free/vegan peanut butter cups. They sell out faster than the speed of light. I was hoping to pick some up at Infinity Foods last weekend but sadly I could not find them. It just so happened a Vegan Peanut Butter Cup recipe appeared in my Twitter timeline and I set about making them. Here's a link to the recipe I made a couple of changes as the recipe is from USA. I appealed to Twitter for assistance about Graham Crackers and the consensus was Digestive biscuits were a suitable substitute. I used caster sugar instead of maple sugar as I haven't a clue if that exists in UK and I could not be bothered to go searching for it. I also skipped the nut topping. These are very easy to make and the hardest part is waiting 2 hours for them to set.
